The Salad That Stole the Show

At the GodLuck Club™, we often say we come for the conversation but stay for the humanity. But let’s be honest: sometimes, we stay for the food, too.

One of our all-time summer faves was from Laura B., a friend and regular at our San Diego gatherings. One Friday evening, she brought what would become an all time favorite: a salad. But like everything at our table, it was a reminder that the best things in life are often the simplest combinations of really good elements.

It was a mix of Gouda chunks, sweet corn, creamy avocado, and sharp red onion.

Sitting there on my living room floor, surrounded by stories of faith, doubt, and everything in between, that salad became part of the "We." It was the crunch in the middle of a deep realization; the sweetness that followed a complex history.

This is the beauty of a potluck-style salon. When a friend like Laura brings a dish, she isn't just bringing something delicious, she’s brought a bit of her own "Me" to the "We."

Laura B’s GodLuck Salad

Sure, there are a thousand versions of this out there, but this one is ours. It’s colorful, textured, and stands up perfectly to the big, beautiful "why" questions we ask at the table.

The Foundation:

  • Gouda Chunks: Go for a mild, creamy Gouda

  • Sweet Corn: Fresh off the cob is best

  • Avocado: Diced large so it stays buttery.

  • Red Onion: Finely diced for that necessary "zing."

  • Cherry Tomatoes: Bite size pops of sweet ripened sunshine

The GodLuck Touch (Optional additions):

  • A squeeze of fresh lime and a drizzle of olive oil.

  • A sprinkle of sea salt and cracked pepper.

  • A handful of cilantro if you’re feeling bright.
